SUMMARY
100% Riesling grapes hand harvested in mid October. Juice fermented in stainless steel tank. Finished medium-dry by preserving some of the natural sugar in the grapes. No malolactic fermentation and no oak barrel aging. Filtered and bottled March 2016. 220 cases produced.

PRODUCTION NOTES
The 2015 growing season was one of the greatest in many years. Below average rainfall and above average temperatures resulted in optimal grape maturity. Yield was just short of 3 tons per acre.

The juice was fermented entirely in stainless steel tank. Fermentation was completed in 3 weeks at an average temperature of 58F. The wine was fined with bentonite and not aged in any oak barrels. Malolactic fermentation was prevented by temperature control. Released in April 2016. 220 cases produced.
