PRODUCTION NOTES
The 2017 growing season was very dry in the Trás-Os-Montes Chaves sub-region with almost no rain between May and October. As a result the grapes achieved perfect ripeness and without any disease pressure giving us clean fruit to work with in the winery.

The grapes were picked, crushed and pressed the same day. The juice was fermented entirely in stainless steel tank. Fermentation was completed in 2 weeks at an average temperature of 60F. Wine was settled in tank for 3 months before bentonite fining to accomplish moderate heat stability. No malolactic fermentation and no oak barrel aging. Filtered and bottled March 2018. 220 cases produced.
