2011 Vidal Blanc
SUMMARY
100% Vidal Blanc grapes hand harvested in mid October. Grapes were lightly crushed before pressing. Juice fermented in stainless steel tank. Finished off-dry by preserving some of the natural sugar in the grapes. No malolactic fermentation and no oak barrel aging. Filtered and bottled April 2012. 190 cases produced.

NOTES
The 2011 growing season was a bit difficult due to on and off rain throughout. Yet again, Vidal Blanc vines resisted disease pressure fairly well and produced grapes with great balance and flavor. Yield was just short of 3 tons per acre.
At the winery grapes were lightly crushed before pressing. The juice was fermented entirely in stainless steel tank. Fermentation was completed in 3 weeks at an average temperature of 58F. The wine was fined with bentonite and not aged in any oak barrels. Malolactic fermentation was prevented by sterile filtration during bottling. Released in June 2012. 190 cases produced.
