PRODUCTION
NOTES
The 2014 growing season got off to a late start after a long and very cold winter. Cooler than average temperatures throughout the summer months and average rainfall resulted in grapes being just ripe enough to avoid "green" flavors in varieties like Pinot Noir.
The grapes were picked, crushed and pressed the same day. The juice was fermented entirely in stainless steel tank. Fermentation was completed in 2 weeks at an average temperature of 60F. Wine was settled in tank for 3 months before bentonite fining to accomplish moderate heat stability. No malolactic fermentation and no oak barrel aging. Filtered and bottled March 2013. Released in April 2013. 230 cases produced.
